 The Blodgett ZEPH-100-E SGL Zephaire convection oven accommodates up to five 18-inch by 26-inch baking pans on its five chrome-plated wire racks. These racks offer 11 adjustable positions, spaced 1⅝ inches apart, providing versatility for different culinary outcomes. Primarily designed for low-volume applications, this oven efficiently roasts, bakes, and rethermalizes foods using its convection heating system. Three tubular heaters produce heat ranging from 200 to 500 degrees Fahrenheit, regulated by the solid-state thermostat. With a two-speed fan motor ensuring even heat distribution throughout the cabinet, cold spots affecting food quality are eliminated. For temperature preservation, solid mineral fiber insulation lines the top, back, sides, and bottom.

The Blodgett ZEPH-100-EGL single-deck convection oven features two doors enclosing a porcelainized cooking compartment, designed for easy loading and removal of pans in a sideways configuration. Glass panels offer a clear view of the oven's interior, enabling efficient management of the baking process. Mounted on 25-inch stainless steel legs that adapt to uneven flooring, this structure ensures stability during pan loading and removal. Crafted from durable stainless steel and featuring a full angle-iron frame, this 38¼-inch-wide, 36⅞-inch-deep, and 57-inch-high oven is built to endure high-volume use in commercial settings

By going ventless, operators avoid taking up valuable hood space in an existing kitchen, saving thousands on installation and maintenance costs.

How Ventless Convection Works

  1. The fan pulls air in and circulates it along with the catalytic converter.
  2. The excess gets pulled up to the hood and passes through a filter.
  3. The fan pulls the air up from the filter and out of the back of the unit.

Easy to Use

  1. Turn oven on and then turn on the Hoodini.
  2. The green indicator light lets you know the oven is ready for use.
  3. The orange button lets you know that it is time for you to replace the filter in the oven and order a replacement for your spare filter.
  4. The red light indicates the filter is full and inoperable.
